Abstract

This paper focuses on the risks posed by mycotoxins produced by toxinogenic fungal pathogens on maize in Italy. Some measures for the prevention of mycotoxin contamination that must be adopted by all parts of the maize supply chain and to prevent or limit these food safety risks are also discussed.
