Glucosinolates: the phytochemicals of nutraceutical importance.

In this book chapter, the occurrence, localization in plant tissues, structure, classification, and biosynthesis of glucosinolates are reviewed. The properties of glucosinolates as phagostimulants, hydrolysed products, myrosinase, and ascorbigens (ABG) are described. Also, the biological activity of glucosinolates, including their anticarcinogenic activity, disease prevention activity, and antinutritional activity are examined.
