Many informative tables form part of this chapter. This encyclopedia includes 240 chapters, providing scientific and culinary information on about 260 species. Each spice is discussed in the pattern: taxonomy, botanical notes, chemical notes, functional properties, medicinal uses, culinary uses and safety issues.
