Main components analysis of Cyperus esculentus in Jingbian, Shaanxi.

Abstract

The general composition (moisture, ash content, starch, crude protein, crude fat, reducing sugar, non-reducing sugar and insoluble dietary fiber) and compositions and contents of fatty acid, amino acid and mineral element of Cyperus esculentus introduced in Jingbian, Shaanxi were analyzed and the nutritional value was evaluated. The results showed that Cyperus esculentus in Jingbian, Shaanxi was rich in starch, non-reducing sugar and crude fat, accounting for about 78%. Cyperus esculentus oil contained 12 kinds of fatty acids. The contents of unsaturated fatty acids and oleic acid were 84.16% and 74.20% respectively, therefore Cyperus esculentus oil could be used to produce oleic acid. The type and content of amino acid in Cyperus esculentus protein were complete and abundant. The order of the contents of mineral elements in Cyperus esculentus was from high to low: Na, Mg, K, Ca, P, Fe, Zn, Mn and Cu. Therefore, Cyperus esculentus in Jingbian, Shaanxi could be used as an excellent crop to extract starch, sugar and oil with broad development prospect and economic benefit, which was suitable for being planted widely in the Muus Desert in northern Shaanxi.
