Abstract

This paper highlights the medicinal and nutritional properties of piñon pine (Pinus pinea) from Chile. It has a high potential as a health food and as a source for bioactive compounds (sterols, fatty acids, dietary fibre, polyphenols). Sensory quality evaluation based on appearance, flavour, texture and aroma showed good results for Chilean piñon. The bearing characteristics and production potential of this species are also described. This crop can become an interesting complement to small and medium landowners and peasants, and likewise important by generating a new product likely to be produced in poor soils, eroded and a relatively low water availability.
