Abstract

The contents and composition of fatty acids and total lipids in the muscle tissue of silver carp (Hypophthalmichthys molitrix) and bighead carp (Aristichthys nobilis) were examined with the aim of establishing whether there was a significant difference between the 2 species, and to what extent the harvest season can influence their lipid composition. The results showed that there was no significant difference in the content of polyunsaturated n-3 and n-6 fatty acids, or in the n-6/n-3 fatty acid ratio in both species. The lipids of the silver carp and bighead carp from the spring harvest had significantly higher contents of n-3 acids and significantly lower n-6/n-3 ratio than fish from the autumn harvest.
