Milk yield, composition and cheesemaking properties of ewe's milk produced from South-Bulgarian Corriedale breed.

Abstract

Ewes were divided into 3 groups depending on breeding herd origin: group I - Kazanlak, group II - Jambol, and group III - Stara Zagora. Average lactation length for the breed was 180 days. Daily milk yield and milk yield/lactation were 682 g and 123 litres, respectively. Kazanlak ewes had the highest milk yield/lactation and Jambol ewes had the lowest. Breed averages for milk TS, fat, protein and casein were 19.21, 7.86, 6.09 and 4.50%, respectively. No significant differences between groups were observed. Milk from Stara Zagora ewes had shorter renneting time (171 s) than that of Kazanlak (227 s) and Jambol (239 s). Cheese yield at 6.5% milk fat and 50% TS was highest from Jambol (1.5 kg).
