Food-borne diseases.

This chapter discusses the aetiology, clinical features, diagnosis, transmission, incubation period, period of communicability, occurrence and distribution, control and prevention, treatment (e.g., fluid/electrolyte replacement, oral rehydration, drug therapy) and surveillance of food poisoning, Campylobacter enteritis, intestinal fluke (Fasciolopsis buski), sheep liver fluke (Fasciola hepatica), fish-transmitted liver flukes (Clonorchis sinensis), lung fluke (Paragonimus westermani), fish tapeworm (Diphyllobothrium latum), beef and pigmeat tapeworms (Taenia saginata and T. solium, respectively), trichinosis and other infections transmitted by food.
