Introduction.

This chapter focuses on the importance of the maintenance or improvement of the postharvest life and quality of fresh fruits and vegetables and the scientific basis for the application of controlled atmosphere (CA) technology to the storage of fresh fruits and vegetables. The history of the effects of gases on harvested crops is presented and the current CA research and commercial CA storage in many countries, such as France, USA, UK, Australia, Canada, Brazil, China, Netherlands, India, Italy, Mexico, New Zealand, Poland, South Africa, Turkey, South East Asia and the Caribbean, are highlighted.
