Food-borne diseases.

This chapter reviews the various types of foodborne diseases affecting humans, describing their aetiology, clinical features, diagnosis, mode of transmission, incubation period, period of communicability, occurrence and distribution, control and prevention, treatment, and surveillance. These foodborne diseases include food poisoning (such as those caused by Salmonella, Staphylococcus or Clostridium toxins, fish poisoning, and poisoning due to organic or inorganic toxins), Campylobacter enteritis, and other food-related parasitic infections caused by Fasciolopsis buski, Fasciola hepatica, Clonorchis sinensis, Paragonimus westermani, Diphyllobothrium latum, Taenia saginata, Taenia solium, and Trichinella spp.
